Name your soup
For 35 years I have been serving a variety of soups in my restaurants. I would go every morning to the fresh vegetable market and select the freshest seasonable vegetables for my soup de jour; never relying on one of those warehouses in which you purchase whatever they happen to have in bulk. To me, making soup is an art. I like to think what will make the tastiest of soups; an herb bouquet or one stock as opposed to another.


There is nothing better than a good chicken noodle or tomato soup, however, I enjoy the challenge of creating a soup that is out of the ordinary.
Once, as a chef in the U.K.,  I was asked to prepare banana soup!  It turned out to be a surprising treat that charmed the palate of my client and his guests.

In the past, my restaurant, LE GRANDGOUSIER, was synonymous with good food. My soups were a special favorite, from the traditional to whatever your imagination desires. 

As a rule, I never use cream (or half & half) or meat unless specified by a customer; I use only the freshest of ingredients and will strictly adhere to any explicit dietary needs.
